This has been changed a bit in Android 9.0 (Pie) and to enable the Do not disturb mode for a set amount of time, you will have to go in to Settings > Sound > Do not disturb > Duration. You can also drag down the quick settings (drag the notification bar twice, or once with two fingers) and then tap and hold on "Do not disturb" and you will end up in this menu directly.

There may be an application available in the Google Play store that does it with less clicks, but I haven't been able to find one myself and I mostly used set times for Do not disturb (work and sleep).
