does Xperia 1 have ufs2.1 or 3?

I think Xperia 1 use UFS 2.1

Indeed it uses UFS 2.1.
Advantages of UFS 3.0 over 2.1:
1. About 2x speed of UFS 2.1
2. Less power consumption due to lower voltage 2,5 V vs 2,7 V-3,6 V
3. Works in lowe and higher temperatures (-40 to 105 celsiun)
4. Constant control of communication channels due to tren and constant monitoring
Hope we will see UFS 3.0 in future xperia devices.

J9110 uses Toshiba THGAF8T0T43BAIR, which is UFS 2.1

I do not understand why they disclose this information. There is nothing wrong with using ufs 2.1, 99.99% of devices on the market uses ufs 2.1. Only One Plus 7 Pro uses ufs 3.0 (while having other issues with screen). Nevertheless people are obliged to know all the technical parameters of device they buy, isn't it against the law?
The problem would be if part of devices uses ufs 2.1 and part ufs 2.0. Oops!...
