Right I think that stability has not improved one iota, though gratefully and admittedly there have been a host of other fixes,
Anyway dont let me influence you, i have undertaken some tests for you to judge yourselves.

I dont know why Xperia 1 User is having such a terrible time with processing photos, Mine is about 1 second
My image procesing is so quick. It takes les than a second to save picture.

Same here. One second to process.
I think in low light it can take longer. Maybe it also makes a difference if you are writing to an SD card vs internal, with the latter being faster.

I AM writing to the internal device, 1 second save for photos.
As for stability tests, it has been confirmed via (AT LAST) via a SCRIPTED email from Sony,
they acknowledge the 4k stability problem and are working on it.

If you are static (stood still) and filming, then the Sony Xperia 1 is fantastic but just falls short of greatness.

That is stunning!
It certainly deserves a 4/5 stars but no lower or higher, a truly decent phone let down by two things, small battery life and no 4k stability and none in HDR mode of 1080p. Normal 1080p is fantastic.
